Taco Pasta Salad

I had a church potluck this weekend, and needed something quick and easy to prepare! I perused Pinterest, as usual when I need a new recipe, and found this Taco Pasta Salad. 

I changed the original recipe a bit to fit my tastes, and also because my grocery didn't have the exact dressing, but it turned out really well. Read on for recipe!

 Here's what you'll need: 
-1 box of tri-color rotini pasta (honestly, any will do)
-2 cups Mexican Blend shredded cheese
-1 bottle spicy ranch
-1 packet taco seasoning
-1 can black beans, rinsed
-1 can corn, rinsed
-1 small can black olives, sliced and rinsed
-1 tub grape tomatoes, sliced
-tortilla strips, not pictured

While pasta is cooking, mix bottle of ranch with taco seasoning. 

Empty cans of beans and corn. Rinse with water. 

As soon as pasta is cooked, drain and rinse with cold water. 

Mix pasta with beans, corn, olives, cheese, and ranch.  

I made this the day before, so I waited to put in my tomatoes and tortilla strips. Before serving, I mixed those in. 

This pasta had a great flavor and was a different twist on the normal pasta salads I see, and even typical taco dishes! It would be excellent with some diced grilled chicken for your main meal too!

Sonic Praline Pecan Iced Coffee

After having blood drawn this morning, I decided to treat myself to an iced coffee. I ordered a large, because you know how coffee orders always come in different size cups than like a soda order. Nope, not at Sonic. They give you the huge honkin' cup that a Sprite would come in. I ain't complaining. 

So if you see me today, I may be bouncing off the walls from my large coffee- with a sugary sweet added flavor. OMG SO GOOD!

I mentioned this book earlier this week, but I've read more, and I'm obsessed. I cannot put this book down! You guys. I read so much yesterday that my eyes got tired and vision was blurry, and I was so mad because I wanted to keep reading! I love murder mysteries, and this one is one of the best! Thanks, Laura, for sharing about this author!

I had been carrying around a rather large Kate Spade wallet, and decided I wanted something a little smaller. This one caught my eye because of the details on the front, so I ordered it. You guys. I love this wallet! It's slim enough to fit in my small crossbody purses, but still holds what I need it to. There's a pocket for coins and one for cash. I keep my most used cards on the outside, and there's room for other ones inside too. I wish it came in a bright, fun color, but I think this is probably from a winter collection, so maybe they will come out with more? There is a ballet pink that's cute, and I may get it next.

What I'm Reading

I've not been reading as much as usual, and it's a little weird for me!

Last year, I averaged around 3 books per month. This year? I'm barely reading 1 a month. Like, what has happened to me? There's just too much life going on, and while I don't hate that I'm busy, I feel like I'm missing out on some awesome book reading!

For April book club, we're reading Greg Iles, Blood Memory

I read about Iles on my good bloggy friend, Laura's, blog. After reading about her experience meeting him, I knew he would be a good choice for our club. We chose this based on Amazon ratings, and so far so good.

Good Friday

Good Friday

The magnitude of what today represents isn't lost on me. I cannot even fathom what Jesus endured as he carried the cross to the hillside. As he walked while people spat on him, beat him, and taunted him. He bore all of those things so that we may live. So that you may live. And so that I may live. 

I am not worthy. 


If you don't know Jesus' love, man, you don't know what you're missing. If you'd like to know more about him or my faith, please email me. Let's chat. It doesn't matter what you've done in life, Jesus loves you and has already paid for your sins- and mine!

I'm not usually one to witness to people, especially on this little blog. I just don't feel confident enough in myself to do that. But this day has hit me hard and I feel the need to share. And my hope is that it reaches someone that just needed to hear those 3 little words- you are loved.

Prom Night

When Andrea announced that today was Show and Tell Tuesday PROM NIGHT edition, I got a little excited. I mean, when did we look better all dolled up than on our prom night? Well, for me anyway.

Let's start with junior year. My first prom was a little nerve-racking! I was soooo nervous.  Mom did my hair and makeup, and I loved it all. Except those eyebrows. Why didn't someone tell me to put the tweezers down? 

The year was 2001 and the shoes were bright white. ;)

My favorite prom (for the look and experience) was my senior prom in 2002. I loved my dress; I loved my hair (Mom did that and my makeup again); I loved my jewelry; I loved my flowers; I loved the people I went with. It was all so much fun.

There was a group of 4 of my best friends that year that all went together with our boyfriends. We had the best time!

Seriously loved my dress. It was so much prettier in person!

The last prom I attended was the following year, in 2003. I was a freshman in college, but my boyfriend that year was a senior in high school in the neighboring county. My sister was going to a different prom that year, so we both got our hair done together at a salon. I hated it. It was so big, and just not me at all. (And the lady doing our hair asked if I was my sister's mom. So that was a sign for the night, I suppose.....)

Mom did my makeup again, and my dress and jewelry was pretty. And my eyebrows are obviously much much better. Thank you to whomever intervened! 

I didn't enjoy this prom near as much as the previous year. It was at a school I didn't go to, with people I didn't really know, but it wasn't too terrible. Luckily, my best friend also dated a guy from that school, so she was there too!

It's fun looking back at these photos from 15 years ago; I look totally different (which is a little depressing), but the memories I made at these events will last a lifetime.

10 Items In My Purse

I'm kind of a purse fan.  I'm a huge fan of Kate Spade and Michael Kors, and if I have some extra money lying around, I'll usually put it towards a bag that I've been eyeing. This week, I'm carrying a bag my mom bought me for Christmas one year; it's a faux ostrich leather in the most beautiful teal blue by London Fog, and I really love it. 

I love everything about this bag except for that middle pocket. I'm not a fan of those, and usually don't buy any bags that has one. This one was a gift, and I love it, so I deal with it.

Let's see what's inside.

1. Ibuprofin
I get headaches a lot, so I have to keep some type of meds on hand. 

2. Michael Kors Jamey wallet
I really like this wallet; it's slim, but holds what I need. It's in dark taupe color, but I wish I had bought the ballet pink. That may be my next purchase.

3. Vera Bradley Checkbook holder
I know many people don't even use a checkbook anymore, but I have to use it for my house payment, yard mowing, water bill, etc. It's easier to just keep it with me, and I love this print. 

4. Card holder
I bought this Kate Spade look alike at Target a few years ago. It holds all of my store loyalty cards. I usually don't carry it around with me, since they can look up your info by phone number.

5. Extra keys
This set contains keys to my parents houses, extra keys for my house, and church. 

6. Main keys
This set has my house and garage key, work key, and car key. The only way I can find them in my bag is by having this giant fur ball attached!

7. Coin purse
Since my wallet is new, the coin holder on the back is super tight. I just put them in this cute case for now. I know. It's extra, and I don't even need it.

8. Lipsticks
I have way too many lipsticks in here, but I use all of them at one point or another.  There's also some lip glosses, nail clippers, chapstick and a perfume ball in there too.

9. Anti-bacterial hand gel
Always on hand. Always. I have one in my car and at my desk too. I use this stuff non-stop. 

10. Mirror
You never know when you'll need to check your lipstick or teeth. I found this cute gem one at Michael's for like $2.

Hacksaw Ridge

I realize I'm super late to this party, but I finally watched it last night, and y'all. It was so so good! I think it's easy to forget about wars going on in other parts of the world; wars that our men and women are fighting in. So one, that was kind of emotional to see how scary and bad it can be. And two, what a hero this man was. He stood up for his beliefs, no matter what would happen to him. Not to mention risking his life to save the injured men. Wow. What a story!

I've been wanting to try the Lip Sense (you know, the two step lip color that won't come off!), but really didn't want to pay the $50. Until..... my make-up obsessed friend, Brandi, showed me her new find. It's Rimmel London Provocalips. It's the same concept, but I got them for around $5 each. I woke up this morning, and yesterday's lip color was mostly still there. That's after eating, drinking, sleeping... new fan here!

The Following

Maybe I should have just made this an entertainment post, but I couldn't leave without mentioning this show. I started it after not watching anything on Netflix for awhile, and it kept popping up. I don't love Kevin Bacon, and honestly kept getting it confused with The Killing, which I've already seen. So one really slow day at work, I started watching it. And after the first episode, I was hooked. 

I will say this: I can only watch it when we're slow at work. is super super creepy, and I just can't watch it at home because I'd lose my sh**.  Home alone at night with this show? No thank you. I mentioned this to some friends at dinner, and they totally made fun of me. Now that they're watching; they completely agree. Couldn't watch it home alone. Nope. But it's so good, so you should watch!!!
