What's Up Wednesday

What I'm Eating This Week: Hopefully lots of fruits and veggies. But let's be real. Probably the same ole junk. 

What I'm Reminiscing About: Old Halloween costumes. I was a great Amy Farrah Fowler, Grumpy Cat, Cleopatra, Flapper, etc. 

What I'm Loving:  This FINALLY Fall weather. I love the cooler temps, the gloomy weather, the leaves turning and falling. 

What I've Been Up To: My whole life has been devoted to the Gilmore Girls. I should be ashamed. But I'm not. 

What I'm Dreading: Turning 32. Eeeeek! I said it out loud. It hurts. 

What I'm Working On: Getting through the 153 episodes of a certain family in Stars Hollow. Also, how awesome would it be to live in a place like that???

What I'm Excited About: My birthday, biotches! I celebrate all week. Life is good. 

What I'm Watching/Reading: For the 3rd time, Gilmore Girls. Keep up, y'all! ;) And I just finished Let's All Be Brave by Christian blogger, Annie Downs. It was great! I'm trying to finish up Radical and The Screwtape Letters. It's hard. I just can't get into them, but I hate leaving a book unread once I've started. 

What I'm Listening To: Only the BEST country music artists ever, the classics, Reba, Garth, and King George. On repeat. 

What I'm Wearing: Long cardigans and riding boots. My jam. 

What I'm Doing This Weekend: Celebrating my burfday with my family. Halloween birthdays rock!

What I'm Looking Forward to Next Month: Thanksgiving and time off from work. I needs a break!

What Else Is New: Not much. I lead a very boring life. It's true. Oh, except I'm going to be an Auntie again. My sister is having another little bundle of joy next year. I can't wait to be the "crazy aunt everyone warned you about" Aunt Mel. 

Bonus Question: What's My Fave Thanksgiving Recipe? Besides my momma's heavenly mashed potatoes? My friend, Whitney's Pumpkin Crunch Cake. I'm not a huge pumpkin fan, and I can't make it like she can, but it is delish. With lots of whipped cream on top, obviously. Here's one that seems pretty close.

Easy Banana Bread

I had some old bananas sitting on my counter, like I do every single time I buy bananas.  But instead of throwing them out like I usually do, I decided to bake some banana bread. Now, I'm not typically one to bake things, so I searched for an "easy" recipe.

Lo and behold, I found one with only 4 ingredients, thanks to Pinterest and the lady behind the Coers Family Blog that had originally posted it.

So I got to work. And since this is a rather unusual occurrence, I decided to blog about it.

Here's what you need:

-3 very ripe banans
-2 eggs
-1 stick of butter
-1 box of cake mix- I used Butter Pecan. Yum! You can also use white or yellow, I read. 

Notice I do not have a stick of butter. So I melted 1/2 cup of butter, which according to Google equals 1 stick. 

*Pre-heat oven to 350 degrees. 

Step 1: Mash the bananas. 

Step 2: Melt butter and add to bananas. Mix.  



Step 3: Add cake mix and then the eggs. Mix. 



 Here's the batter all mixed together. Doesn't it look like baby food?



Step 4: Spray the heck out of the loaf pan with some Pam. Then add the batter.


The fact that it almost filled the pan should have been a red flag. But nope. I put it in the oven. 
Step 5: When you smell burning, quickly put a cookie sheet under the bread to catch everything that "overflows" from the loaf pan. Quick cleanup!



I checked on it at 45 mins, but it was not yet finished. I baked an additional 15 minutes.

I wasn't sure if I should let it cool in the pan or immediately remove it. The first Google search I read said to remove immediately. So I did.

And this happened.


So obviously, don't do what I did. I went back and read the blog, and she said to let it cool in pan. Oops. 

Even though it looked terrible, it tasted delicious. The bread was super moist and had a great flavor. And the best part? Only 4 ingredients!

Edit: I've since made this recipe a ton and it turned out wonderfully! Don't let that horrible pan picture turn you off! ;)

Friday Favorites

 It's Fri-yay, and I couldn't be more excited! Seriously! If you were around, you'd hear me whooping it up, Vicki Gunvalson style! ;)

I was sick for literally 2 weeks. Hallelujah and amen, I feel 100x better. Week 1 I had the stomach bug. Week 2, bronchitis and pneumonia. Yes. Both. It was hell. But I'm better!!




My new favorite warmer. I put this in yesterday at work, and got sooo many compliments. It smelled like heaven all day long. But warning- I swear it made us all hungry. Be prepared for that!


On Saturday, I got to go to the Sacramento Kings and New Orleans Pelicans pre-season game. It was at Rupp, and I kid you not guys, I had front row seats. FRONT ROW! It was amazing. I got to see these two up close and personal (Boogie Cousins and Willie Cauley-Stein) and sat right behind Anthony Davis. Best day of my life. 

The only thing between us was a security guard. That's it. I think I could have taken him. ;)

And that arrow is pointing to Coach Cal. Pretty exciting stuff! 


I may have been sick during this, but I yelled and jumped and enjoyed the heck out of that game!

Let me preface by saying I am NOT a pumpkin fan. You all can keep  your damn PSLs and pumpkin M&Ms and all that jazz.
But I can do about anything cheesecake. So I tried this Pumpkin Cheesecake milkshake from Brusters yesterday and it was quite good. I love cheesecake. Even if it is pumpkin.


I am so dang excited about these new emojis. Finally! We have a taco. And cheese. And a rolling your eyes face. And a sick face. Love it! We still need a coke emoji though. Hear that, Apple?

Jinxed

Let's be honest. I did this to myself. I jinxed myself.

Let me tell you a story. Picture it. Slick Rock. Two weeks ago. A girl sitting with her dad and grandmother.

We were chatting about my brother-in-law and niece both being sick. Dad asks me how I've been.

"Oh, great," I say. "I never get sick. Usually only a cold at the end of summer. I've been good!"

Play the eerie music. Hide under your covers. A collective "uuuhhhhh" can be heard throughout the country.

I did it. I jinxed myself.

The following Tuesday, I come down with some kind of stomach bug. Can't eat. Can't drink. Hugging the porcelain throne like the morning after a bad hangover. A few days later, I'm fine.

Yay! I can eat real food again!

Until Monday  night. I'm at a friend's boutique party, when I suddenly get the chills and can't warm up. I go home, go to bed, and am burning up. Like sweating all through the night and up like every hour because I'm so hot. At work the next day, everyone is freezing because I've got the windows open, air on, and my fan on. Still hot and sweaty. Until about 1pm, when I get the chills again. Long story short, I keep feeling worse and worse. I leave work early, cancel on Bunco night and go to Urgent Care. They test me for flu, but it comes back negative, even though I have all of the symptoms.

You know, I really wonder if this would have happened if I had kept my big mouth shut. Would I have gotten sick at all if I hadn't made the foolish statement- "I never get sick!"

Ya see. I jinxed myself. Don't do it, friends. Don't make such a bold statement. You will pay.

Checking In

If you've been around here for very long, you know I'm not the most consistent blogger. I only write when the mood strikes.

And usually, I get my ideas as I'm lying in bed, on the verge of sleep. I'll note that in the morning. It will be an awesome post, I think. And then morning comes and I can't, for the life of me, remember what the heck I had came up with the night before. It actually happens quite a bit. You'd think I'd learn to jot these things down at night when I think of them, but sleep beckons and I succumb before I can lift my hand.

My goal is to be a bit more consistent. To not just do those link-ups that I love so much. To come and type what's going through my mind, even if it does seem a little crazy. We'll see. I usually never follow through. But I have a goal at least.
